OUR HISTORY
More than two hundred years ago, a community of nuns in Ronda, an emblematic town in Andalusia, began producing and marketing an organic olive oil that quickly earned a reputation as the best in the region and the world. This oil, known as LA Amarilla, stood out among the locals for its exceptional quality.
In the 1990s, the Gómez de Baeza family, owners of the LA Amarilla olive grove, decided to continue the tradition established by the nuns, founding LA Organic. As sales grew and the original production could not meet demand, LA Organic implemented a system of Pagos Asociados, inspired by the wine production model, to ensure a constant supply and maintain high quality standards.
Today, LA Organic has evolved to become LA ALMAZARA LA ORGANIC, a place that not only continues the tradition of producing high quality organic olive oil, but also celebrates the rich cultural heritage of Andalusia. Inspired by the great wineries and vineyards, this space has been conceived by renowned designer Philippe Starck, who is also co-founder and creative director of LA Organic.
LA Almazara is more than a mill; it is a museum and cultural center that pays homage to Andalusian tradition and the art of olive oil production. Starck describes this project as a reflection of Andalusia, capturing its austere, rigorous and passionate essence. The Almazara fuses Spanish artistic culture with the ancestral know-how of olive oil production, creating a unique space that celebrates both the past and the future of the region.
